If the idea of eating a chilled soup leaves you cold, well think again.

This refreshing  chilled pepper gazpacho recipe from Chef Giles Thompson of The Earl of March is easy to make, healthy, and packs plenty of flavour.

Made from fresh, seasonal produce that includes peppers, tomatoes and cucumber, it can even be prepared a day ahead to help the flavours really develop.

For a twist on tradition, you could also try different combinations adding chillies for a tasty kick or even sweetening with strawberries.

Serve in chilled shot glasses and drink as an appetiser before a barbecue or summer lunch - it's deliciously cooling on a hot day.
