A shrimp salad with peppers, garlic, avocado and lettuce. Fresh, spicy and full of flavour!



  • 24 big (raw) shrimps or prawns
  • 2 spring onions
  • 1 red sweet pepper 
  • 2 avocados
  • 1 head of lettuce
  • 1 clove of garlic, crushed
  • 1/2 red chilli pepper, sliced
  • 6 tablespoons of extra virgin olive oil

Tomato Dressing:

  • 15 sweet cherry tomatoes
  • 150 ml extra virgin olive oil
  • 10 basil leaves
  • 40 ml red wine vinegar
  • 1 shallot, finely chopped
  • Salt and pepper


  1. Heat the olive oil in a small saucepan and slowly cook the tomatoes. Simmer for 5 minutes. Leave to cool.   
  2. Add the vinegar, basil and salt and pepper, mix the ingredients until well blended and then add the chopped shallot.
  3. Salt and pepper to taste. This dressing goes well with Mediterranean salads.



  1. Start with baking the shrimps in olive oil with garlic, chilli pepper and a little salt and pepper, bake until they become pink.
  2. Wash And dry the lettuce and gently take of the leaves. Cut the avocado into thin slices, dice the peppers and spring onion into very thin rings.
  3. Mix the vegetables with the lettuce and transfer to plates. Garnish with the shrimps and dill and season with the tomato dressing.
