  • 4 sliced bell peppers (red, yellow, green, orange)
  • 3 sliced carrots
  • 2 sliced medium red onions
  • 2 chopped garlic cloves
  • 1 sliced red chilli (hot) half chilli (medium) or 1tsp of chilli flakes (medium)
  • 3 tbsp. smoked paprika
  • 1 tbsp. garlic pepper
  • 3 tbsp. Maggi seasoning
  • 3 tbsp. olive oil
  • 2 sweet potatoes
  • 1/2 tsp. oregano
  • 3 tbsp. olive oil
  • 6-8 Tortilla wraps
  • Mayonnaise


  1. Slice the peppers, chilli, carrot and onion put into a roasting tin along with the chopped garlic.
  2. Add the smoked paprika, garlic pepper and Maggi. Stir to coat everything in the spices.
  3. Pour the olive oil over the top.
  4. Peel and slice to about the size of chunky chips or wedges.
  5. Put into a bowl with the olive oil and oregano, mix together.
  6. Put the sweet potatoes onto greased proof paper on a baking tray.
  7. Cooking time 30-40 minutes. Pre heat the oven to 200C. Place both the peppers and the sweet potatoes in the oven at the same time. Stir the pepper mix every 10 minutes or so to stop the top from charring as well as turning the sweet potatoes every 10 minutes.
  8. Once all cooked take a wrap and spread a small (or large) amount of mayonnaise on the wrap, add a mix of sweet potato and pepper mix, Wrap and enjoy!
