This beautifully fresh recipe tastes great with the hint of chilli, lemon and coriander, bringing a real zing to the dish.



  • 1 red bell pepper
  • 1 yellow bell pepper
  • ¼ onion
  • ½ cucumber
  • 1 clove garlic
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. lemon juice
  • Pinch of chilli flakes
  • Pinch of sea salt
  • Few sprigs of coriander



  1. Finely dice the peppers, onion and cucumber.
  2. Grate or crush the garlic and add to the bowl.
  3. Stir in the extra virgin olive oil, lemon juice, chilli flakes, sea salt & fresh coriander (reserve some for decoration). Stir well and taste - add more of any ingredients as you see necessary.
  4. Garnish with the last of the coriander and serve as soon as possible.
