These super easy stuffed peppers make a great vegetarian supper.



  • 4 peppers, any colour, or mixed, cut in half lengthways
  • 500g button mushrooms
  • 3 cloves crushed garlic
  • 1 small bunch spring onions
  • 50ml olive oil



  1. Heat the oil.
  2. Chop the spring onions and save the tops for garnish.
  3. Fry mushrooms and garlic for two minutes then add the chopped spring onion and fry for a further minute.
  4. Fill the peppers.
  5. Bake for 20 to 25 minutes gas mark 5 (180°C).
  6. Garnish with shredded tops of spring onions.
