Pickled peppers are great in sandwiches or served alongside meats and fish.



  • 500ml water
  • 250ml white vinegar
  • 8 tbsp. sugar
  • 1 tbsp. salt
  • 10 grains black pepper
  • 8 grains of AllSpice
  • 2 medium sliced onions
  • 12-14 slices of mixed coloured peppers



  1. Mix the vinegar and water together and add the sugar, salt, pepper and spice.
  2. Bring to the boil, then add the onion and peppers and simmer for 10-12 minutes.
  3. Put the hot mixture into jars and seal the lids.
