An aromatic, healthy dish that’s quick and easy to prepare.

 

Ingredients

  • 1½ tbsp oil, sunflower, groundnut or vegetable
  • 500g prepared pre-cooked mixed seafood (defrosted and drained if previously frozen)
  • 1 tsp finely chopped root ginger
  • 1 red or green chilli (medium), seeded and sliced
  • 1 clove of garlic
  • 1 each red, green, and orange peppers, diced
  • 75g sliced button mushrooms
  • 300g bean sprouts
  • 6 spring onions, cut into short strips
  • 3-4 tbsp (45-60ml) black bean sauce
  • Salt and pepper, or soy sauce, to season
  • Toasted sesame oil or coriander leaves to garnish (optional)

 

method

  1. Heat a wok until hot and add oil.
  2. Once the oil is hot, add the seafood and fry for 1 minute, tossing regularly.
  3. Remove the seafood and place to one side, leaving the oil still in the pan. 
  4. Add the ginger, chilli and garlic to the oil and stir well.
  5. Add the peppers, mushrooms, bean sprouts, and spring onions, stir-frying for 2 minutes.
  6. Add the seafood and black bean sauce and stir-fry for a further minute.
  7. Season and serve immediately on pre-heated plates, garnished with a little sesame oil or coriander leaf.
